Ingredients:
Queso:
- 2 tablespoons butter (unsalted)
- 2 tablespoons all-purpose flour
- ½ cup + 2tbsp full-fat milk
- 1/4 cup cheese (Processed or Cheddar)
- Salt & Pepper to taste
- 1 jar refried beans
- 1 jar Curio’s Mexican Salsa
- ½ cup grated cheese
- 1/4 cup jalapenos in brine
- 1/8 cup black olives, sliced
- 1 onion, chopped
- 1 packet of salted nacho chips
Method:
Queso:
- In a saucepan, combine butter and flour on medium heat. Once the smell of raw flour is gone, add the cold milk whilst stirring continuously.
- Once slightly thickened, add the cheese and let cook for a while. Cover with cling film and keep aside.
Assembly:
- In a large oven-proof dish, arrange the nachos in a single layer.
- Spread some refried beans and some Curio Salsa Mexicana on top.
- Scatter olives, jalapenos, and chopped onions.
- Drizzle your queso.
- Repeat this process. Nachos, Beans, Salsa, veggies, cheese sauce.
- Top with grated cheese, bake for 15 minutes in a pre-heated oven at 180 degrees Celsius.
