Quesadillas with Curio’s Mexican Salsa

Ingredients:

Curio Mexican Salsa

Chopped Tomatoes

Chopped Onions

Corn Tortillas 

Corn on the cob 

Green Chillies

Grated Cheese 

Method:

  • Pressure cook corn on the cob, in a cooker with water and a pinch of salt.
  • In a separate bowl, add chopped tomatoes, onion, corn, green chillies, salt, lemon juice, black pepper.
  • Heat a griddle pan, add a knob of butter, warm your tortilla
  • On one half of the tortilla, add a layer of refried beans, your veggie mix, generous dollops of the Curio Mexican Salsa and grated cheese! 
  • Fold over, get a nice browning on the tortilla. Repeat for as many as you’d like!
  • Serve hot with Curio’s Mexican Salsa.
