Spaghetti Alla Norma

Ingredients

  • 60gm chopped eggplant (~1 small eggplant)
  • 4-5 tablespoons of Curio Pizza-Pasta Sauce
  • 1-2 Tablespoons water (adjust according to desired consistency)
  • 4-5 basil leaves, chopped
  • 3 large cloves of garlic, chopped
  • Olive oil, for shallow frying
  • Spaghetti or pasta of choice
  • Salt, to taste

Method:

  • Cook pasta according to package instructions, reserving ½ cup of starchy pasta water.
  • Heat oil and shallow fry the eggplant, or 4-5 minutes. Drain excess oil on a paper towel and salt immediately.
  • In a heavy bottomed pan, heat a tablespoon of oil and shallow fry the garlic.
  • Add a few tablespoons of the Curio Pizza-Pasta Sauce, stir in some pasta water along with freshly chopped basil and let it cook for 2-3 minutes.
  • Add the fried eggplant and spaghetti and let the sauce coat the pasta.
  • Serve hot, with a cheese you like (we highly recommend Parmesan) and enjoy!
